Calcium Carbonate (Chalk)
Calcium Carbonate (CaCO3) aka Chalk, is used for adjusting the mash water profile and is only effective when added directly to the mash. The result of adding chalk directly to the mash, is an increase in the mash pH. If you’re attempting to make darker beer-styles with soft water, you’re going to need some chalk. Use pH test paper or a pH meter to determine how much to add.
Adding 1 gram of chalk to 1 gallon will add approximately:
– 105 ppm (parts per million) of Ca+2
– 158 ppm (parts per million) of CO3-2
