Gypsum adds hardness to soft water low in sulfate, lowers the pH and accentuates hop bitterness.
Calcium Sulfate (Gypsum)
Calcium Sulfate (CaSO4) aka Gypsum, adds hardness to soft water that is low in sulfate. Gypsum will also lower the pH of water while adding a “crispness” to the hop bitterness. If using distilled or reverse osmosis water, adding gypsum will increase hardness. Use up to 1 teaspoon per 5 gallons.
Adding 1 gram of calcium sulfate to 1 gallon will add approximately:
– 61.5 ppm (parts per million) of Ca+2
– 147.4 ppm (parts per million) of SO4-2
